APICIA x Julie Labergerie Recipes

01. “Gut Friendly” Golden Dressing

Rich in pro and prebiotics thanks to pollen and miso, this pretty golden-colored vinaigrette will pamper your intestinal microbiota, the seat of our immunity, while putting a little sunshine on your plate!

Ingredients 

  • 1 tsp white miso
  • 1 teaspoon of turmeric
  • 1 teaspoon of fresh pollen
  • 1 tbsp of cider vinegar
  • 2 cases of linseed or rapeseed oil

Process

Mix all the ingredients, and use it to season your salads, raw vegetables, top your vegetables, or spice up your white fish. 

02. Immunity & Antioxidant Autumn Salad

A salad that is both light and delicious, rich in vitamins, trace elements, vegetable proteins and quality fatty acids, which will also support your immune system thanks to shitake, the immunity mushroom par excellence, as well as fresh pollen. . 

Ingredients 

  • 200g of lamb's lettuce
  • 100g quinoa
  • A few pumpkin wedges (here, three nice wedges per person)
  • 80g shitakes
  • Gomasio
  • Sesame oil
  • Olive oil
  • Salt pepper
  • A few pecans
  • A few goji berries
  • A few pickled onions
  • A few parsley leaves
  • 2 teaspoons of fresh pollen (1 per person)

Process 

1/ Wash and drain the lamb’s lettuce, then set aside

2/ Cook the quinoa for 10 minutes in boiling water, drain, and season with sesame oil and a little gomasio. 

3/ Wipe the shitakes with a damp cloth (do not run under water), remove the tails, and cut them into strips. Brown the shitakes in a little olive oil for around fifteen minutes (it is very important to cook them well).

4/ Steam the pumpkin quarters; or in the oven, with a little olive oil, salt, pepper for 30 minutes. 

4/ On a plate, place the lamb’s lettuce, garnished with a drizzle of sesame oil. Add the quinoa and shitake. Then place the pumpkin quarters. Add the goji berries, pecans, onion pickles, parsley leaves and pollen, and enjoy immediately.
